These Keto Pancake Muffins are the perfect low-carb breakfast for meal prep! They’re fluffy, filling, and super easy to make ahead so you’ve got breakfast ready all week long. You can make them plain, with blueberries, or with sugar-free chocolate chips.
🥣 Ingredients
1 cup (240g) full-fat cottage cheese
4 large eggs
1/4 cup unsweetened almond milk
2 tbsp melted butter
1 tsp vanilla extract
1 1/4 cups almond flour
1/4 cup coconut flour
2 tbsp sweetener (allulose or Swerve)
1 1/2 tsp baking powder
1/4 tsp baking soda
Pinch of salt
Optional: 1/2 cup blueberries or 1/2 cup sugar-free chocolate chips
🔪 Instructions
Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tray.
Blend cottage cheese, eggs, almond milk, melted butter, and vanilla until smooth.
In a large bowl, whisk almond flour, coconut flour, sweetener, baking powder, baking soda, and salt.
Stir the wet mixture into the dry until combined. Fold in blueberries or chocolate chips if using.
Divide batter into muffin cups (about 3/4 full).
Bake 18–22 minutes, until tops are golden and a toothpick comes out clean.
Cool slightly and enjoy warm with butter or sugar-free syrup.

Every bowl starts with ¾ cup full-fat cottage cheese. Sweet bowls get blended smooth (30 seconds, any blender or chopper); savory bowls stay as-is, straight from the tub.
FRENCH TOAST BOWL (~290 cal | 24g protein)
Blend cottage cheese + 1 tbsp allulose + ½ tsp vanilla + ½ tsp cinnamon + ¼ tsp butter extract (the secret — this is what makes it FRENCH TOAST). Toast 1 slice of bread DARK, butter it, cube it, pile on top. Sugar-free maple drizzle, dust of powdered sweetener and cinnamon. Eat while the toast is warm.

Stab a small russet with a fork, microwave 5–6 minutes until tender. MAKE-AHEAD: Blend the sweet bases in triple batches, portion into jars — they keep 3–4 days in the fridge (stir off any surface whey). Add toast/toppings/PB fresh each morning. Even lazier: blend the entire tub the day you buy it and put it back in the tub.

Board Two is a buffalo chicken salad lunchbox I packed at 8am, sealed, and ate cold at 4pm to see if it actually survives a workday. A real Lunchables has 11g of protein and a cookie. These have up to 96g. Were adults now.

BOARD ONE — THE CARVING BOARD (~510 cal | 49g protein | ~12g net carbs)
4.5 oz carved oven-roasted turkey breast (Costcos whole Kirkland breast — carve it thick), 1 oz aged clothbound cheddar broken into rough chunks, 10 pepperoni slices air-fried at 350°F for 5–7 min into crispy chips (these are the crackers), spicy pickle spears, ⅛ cup salt & vinegar pistachios, a mini cup of spicy mustard, and the dessert cup: ¼ cup cottage cheese + ¼ cup blueberries. Stack rule: pepperoni chip, fold of turkey, chunk of cheddar. One bite. You know why.
BOARD TWO — THE COLD LUNCH BOARD (full board: ~720 cal | 96g protein · half-salad version: ~465 cal | 55g)
BUFFALO CHICKEN SALAD: Blend ⅓ cup full-fat cottage cheese completely smooth, then blend in 1 tbsp real mayo (one spoon makes the whole dressing taste like mayo — dont skip it), 1 tsp Dijon, 1 tsp pickle brine, ½ tsp garlic powder, ¼ tsp onion powder, ½ tsp smoked paprika, ¼ tsp cayenne, salt and pepper. Add 3 tbsp dill pickles + 2–3 baby carrots and PULSE 2–3 times only (pulse, dont blend — you want confetti, not relish juice). Fold into 1 can (12.5 oz) drained, patted-dry, fork-flaked chicken breast with 1 tbsp Franks RedHot and a squeeze of lemon. Season it 20% bolder than tastes right — cold food eaten hours later loses volume. That rule alone will fix your meal prep.
On the board: the salad, half a beef stick sliced into coins, baby carrots for scooping, and a Babybel.
Smaller appetite? Split the salad across two days — thats ~465 cal / 55g protein per box and one build makes two lunches.
