Keto Cottage Cheese Pumpkin Cookies (Soft & Crumbl-Style)
Ingredients (12–14 cookies)
Wet:
¾ cup full-fat cottage cheese
⅓ cup 100% pumpkin puree (not pie filling)
1 large egg
1 tsp vanilla extract
Dry:
1½ cups superfine almond flour
¼ cup Levels Grass Fed Vanilla Bean Whey Protein
1 tsp baking powder
⅛ tsp xanthan gum
1 tsp pumpkin pie spice (or ½ tsp cinnamon + ¼ tsp nutmeg + pinch cloves)
¼ cup Swerve Granular
2 Tbsp Swerve Powdered (mixed into dry to soften sweetness + prevent crystallization)
Optional Filling/Frosting:
3 oz cream cheese, softened
1 Tbsp Swerve Powdered
½ tsp vanilla extract
Method
Blend Wet Ingredients
In a blender or food processor, combine cottage cheese, pumpkin puree, egg, and vanilla.
Blend until completely smooth (no curds visible).
Mix Dry Ingredients
In a large bowl, whisk almond flour, whey protein, baking powder, xanthan gum, pumpkin spice, Swerve Granular, and 2 Tbsp Swerve Powdered.
Combine Wet + Dry
Pour blended wet mixture into dry.
Stir until dough forms.
Adjust if needed: add 1–2 Tbsp almond flour if too wet, or 1–2 tsp pumpkin puree if too dry.
Optional Filling/Frosting Prep
In a small bowl, beat cream cheese, 1 Tbsp Swerve Powdered, and vanilla until smooth.
Chill 10 minutes so it’s scoopable.
Shape Cookies
Line a baking sheet with parchment paper.
Scoop ~2 Tbsp dough per cookie. Place 2 inches apart.
If stuffing: flatten dough, add ½ tsp cream cheese mixture, fold and seal.
If topping later: keep cookies flat, you’ll frost after baking.
Bake
Preheat oven to 325°F (162°C).
Bake 18–22 minutes, until edges are lightly golden and tops look set.
Let cool 10 minutes on pan, then transfer to rack.
Finish
For stuffed cookies: they’re ready as is.
For frosted cookies: spread or pipe cream cheese mixture once fully cooled.
Texture
These bake up soft, moist, and slightly chewy — more like Crumbl pumpkin cookies, not crisp gingersnaps.
They firm up more after cooling.

![The Weight Loss Lunchable Everyones About to Be Packing
grab my cookbook https://www.daveskitchenmarket.com
I rebuilt Lunchables for adults — two versions. Board One is the nostalgia upgrade: carved turkey, aged cheddar, and pepperoni chips instead of crackers. Board Two is a buffalo chicken salad lunchbox I packed at 8am, sealed, and ate cold at 4pm to see if it actually survives a workday. A real Lunchables has 11g of protein and a cookie. These have up to 96g. Were adults now.

BOARD ONE — THE CARVING BOARD (~510 cal | 49g protein | ~12g net carbs)
4.5 oz carved oven-roasted turkey breast (Costcos whole Kirkland breast — carve it thick), 1 oz aged clothbound cheddar broken into rough chunks, 10 pepperoni slices air-fried at 350°F for 5–7 min into crispy chips (these are the crackers), spicy pickle spears, ⅛ cup salt & vinegar pistachios, a mini cup of spicy mustard, and the dessert cup: ¼ cup cottage cheese + ¼ cup blueberries. Stack rule: pepperoni chip, fold of turkey, chunk of cheddar. One bite. You know why.
BOARD TWO — THE COLD LUNCH BOARD (full board: ~720 cal | 96g protein · half-salad version: ~465 cal | 55g)
BUFFALO CHICKEN SALAD: Blend ⅓ cup full-fat cottage cheese completely smooth, then blend in 1 tbsp real mayo (one spoon makes the whole dressing taste like mayo — dont skip it), 1 tsp Dijon, 1 tsp pickle brine, ½ tsp garlic powder, ¼ tsp onion powder, ½ tsp smoked paprika, ¼ tsp cayenne, salt and pepper. Add 3 tbsp dill pickles + 2–3 baby carrots and PULSE 2–3 times only (pulse, dont blend — you want confetti, not relish juice). Fold into 1 can (12.5 oz) drained, patted-dry, fork-flaked chicken breast with 1 tbsp Franks RedHot and a squeeze of lemon. Season it 20% bolder than tastes right — cold food eaten hours later loses volume. That rule alone will fix your meal prep.
On the board: the salad, half a beef stick sliced into coins, baby carrots for scooping, and a Babybel.
Smaller appetite? Split the salad across two days — thats ~465 cal / 55g protein per box and one build makes two lunches.
The internet is calling this whole anti-dessert snack plate thing savory-maxxing. Im calling it lunch.
CANT FIND COTTAGE CHEESE? The substitutes I tested work in the dressing too: [link to pizza bowl video]
