MACROS (per brownie, makes 9):
~160 calories | 9g protein | 7g fiber | ~6g net carbs | 0g added sugar
For comparison, a box-mix brownie: ~170 calories, 1g fiber, 1g protein, ~14g added sugar. Same calories — completely different food.
FULL RECIPE:
Blend until completely smooth (2+ minutes, zero specks): 1 can (15 oz) black beans (drained and rinsed until the water runs clear), 3 large eggs, 3 tbsp melted butter, 2/3 cup allulose, 2 tsp vanilla extract.
Add and blend again: 1/2 cup unsweetened cocoa powder, 1 scoop vanilla whey protein, 1/4 cup ground flaxseed, 2 tsp instant espresso powder (secret weapon — makes the chocolate louder, kills the bean), 1/4 tsp baking powder, 1/2 tsp salt.
Stir in by hand: 1/3 cup sugar-free chocolate chips.
Bake in a buttered, parchment-lined 8x8 at 350°F for 22–26 minutes — pull them when a toothpick in the CENTER comes out with moist fudgy crumbs, not clean. If the top darkens before the center is done, tent loosely with foil. Cool at least 1 hour before cutting (they set as they cool). They're even better on day two — that's when the last hint of bean disappears completely.
HEADS UP: 7g of fiber per brownie is a lot if you're not used to it. Start with one, not three. You're welcome.
