When the food noise won’t shut up, this is what I make.
This is my Keto No-Snack Taco Crunch Bowl — a big, satisfying bowl designed to actually stop the constant urge to keep eating. It’s not low-cal, it’s not “light,” and it’s not trying to be fancy. It’s meant to be enough.
This is the kind of meal I rely on when I’d rather eat once than snack all night.
🥣 Keto No-Snack Taco Crunch Bowl
Ingredients
Taco Beef
1½ lb (24 oz) 80/20 ground beef
1 tbsp butter
1 tsp kosher salt
1 tsp garlic powder
1 tsp smoked paprika
2 tsp ground cumin
1 tsp chili powder
½ tsp black pepper
Bowl Base
1 bag (16 oz) coleslaw mix (with carrots)
(plain, unseasoned, used cold)
Creamy Taco Sauce
½ cup full-fat sour cream
2 tbsp mayonnaise
1 tbsp lime juice or 2 tbsp pickle juice
½ tsp kosher salt
1–2 tbsp Tabasco Original Hot Sauce
Finish
1 cup shredded sharp cheddar cheese
¼ cup pickled jalapeños (optional garnish — not required)
👩🍳 Instructions
Heat a large skillet over medium-high heat. Add the 1½ lb of 80/20 ground beef and let it cook undisturbed for 2–3 minutes to develop browning.
Break into large crumbles and continue cooking until deeply browned but not crispy. Do not drain the fat.
Add butter, salt, garlic powder, smoked paprika, cumin, chili powder, and black pepper. Cook 60–90 seconds until fragrant and glossy.
In a bowl, whisk together sour cream, mayo, lime (or pickle) juice, salt, and Tabasco. The sauce should taste sharp and punchy on its own.
Divide the cold coleslaw mix between large bowls. Spoon the hot taco beef directly over the slaw so it lightly wilts.
Drizzle generously with the sauce and top with shredded cheddar. Serve immediately.
This bowl is meant to replace snacking — not lead to it.
