The cottage cheese pita that finally gave me REAL puff. After 5 attempts and a lot of flat, sad bread — this version actually inflates into a proper pita. 26g of protein per pita, only 5g net carbs, made with ingredients you probably already have if you've been following along with my high-protein bread series.
This pita is the foundation for my upcoming gyro video (dropping next week), and I'll be using it for shawarma, flatbread pizzas, and a bunch of other recipes throughout the summer. Save this one — you're going to want it.

📋 FULL RECIPE — Cottage Cheese Pita
Makes 6 pitas
INGREDIENTS:
1¼ cups low-fat cottage cheese
1 large egg
1 tbsp olive oil (plus more for brushing)
1¼ cups vital wheat gluten
2 tbsp oat fiber (NOT oat flour)
1 tsp baking powder
1 tsp allulose
1 tsp garlic powder
½ tsp salt
INSTRUCTIONS:
Blend cottage cheese smooth in a small food processor (30-45 seconds, no curds). Transfer to a mixing bowl.
Whisk in the egg and 1 tbsp olive oil until fully combined.
In a separate bowl, whisk together vital wheat gluten, oat fiber, baking powder, allulose, garlic powder, and salt.
Add dry mix to wet mix. Stir with a spatula, then use your hands to bring the dough together into a ball.
Turn out onto a clean counter and knead by hand for 3 minutes. Test gluten with the windowpane test — stretch a small piece between your fingers; if it stretches thin without tearing, you're ready.
Form into a ball, place in a lightly oiled bowl, cover with a damp towel, and rest 20 minutes minimum.
Divide into 6 equal pieces (~85g each). Roll each into a ball, then roll between parchment sheets to ¼-inch thick ovals. Rest rolled pitas 5 more minutes.
Heat cast iron skillet over MEDIUM heat for 5 full minutes. Have a lid ready.
Brush one pita with olive oil. Place oil-side down in the dry hot pan. COVER WITH LID immediately. Cook 2-3 minutes per side until puffed and charred in spots. The lid is what makes the puff happen.
Stack finished pitas on a plate and cover with a clean kitchen towel immediately — this keeps them soft and foldable.

Ive made Marry Me Chicken seven different ways over three years — the original, keto, crockpot, steak, pork, fajitas, even tortellini. This is the final version: the sauce rebuilt so it actually has protein in it, the chicken seared so it cant dry out, and the whole plate lands at 51g of protein for ~520 calories. The classic runs ~780 calories with half the protein. Same dish. Twice the reason to eat it.

MACROS (per serving, makes 4):
~520 calories | 51g protein | ~8g net carbs | ~29g fat
Classic marry me chicken: ~780 calories | ~26g protein
THE CHICKEN:
2 large chicken breasts (about 1.5 lbs), halved into 4 cutlets, pounded to 1/2 inch. Salt both sides and rest 15 minutes (this mini-brine is the juiciness insurance). Dredge in 1/4 cup almond flour + 1/4 cup grated parmesan mixed. Sear in 2 tbsp of the sun-dried tomato jar oil + 1 tbsp butter over medium-high, 3–4 minutes per side until golden and crusted. Set aside — slightly underdone is correct, they finish in the sauce.
THE PROTEIN SAUCE (the whole trick):
In the same pan on medium: 4 minced garlic cloves + 1/2 cup chopped oil-packed sun-dried tomatoes, 60 seconds. Add 3/4 cup chicken broth, scrape up every browned bit, simmer 2 minutes. Stir in 1/4 cup heavy cream, 1 tsp Italian seasoning, 1/2 tsp red pepper flakes, and 1/4 tsp xanthan gum (optional, keeps it silky).
THEN KILL THE HEAT. Wait for the bubbling to stop. Stir in 1 cup full-fat cottage cheese that youve blended completely smooth, then 1/2 cup fresh-grated parmesan in three additions. Off the heat is the whole trick — boiling splits cottage cheese into grainy curds, and dumped parmesan clumps. Off-heat and incremental = glossy restaurant sauce with ~15g of protein in the sauce alone.
FINISH: Chicken and its juices back in the pan on LOW, 3–4 minutes, spooning sauce over — steaming, never boiling. Torn basil on top. Serve over cauliflower mash, zucchini noodles, or my cabbage fettuccine.

REHEATING LEFTOVERS: 50% microwave power in 45–60 second bursts, stir between, splash of water or milk first, stop at steaming. Full power boils the edges and the sauce goes grainy. Keeps 3 days.
