The Ultimate Keto Zucchini Bread
This is the best keto zucchini bread you’ll ever make — soft, buttery, and sweet with a perfect tender crumb. It tastes just like the viral zucchini bread everyone’s posting, but with only 3g net carbs per slice. The secret? A touch of cottage cheese for moisture and structure, and the right balance of almond flour, coconut flour, and psyllium so it feels like real bread — not “keto bread.”
🧈 Ingredients
1⅓ cups (128 g) blanched almond flour
2 Tbsp (14 g) coconut flour
1 Tbsp (8 g) psyllium husk powder
1 tsp baking powder (aluminum-free)
½ tsp salt
1 tsp ground cinnamon
3 large eggs
½ cup (113 g) unsalted butter, melted & cooled slightly
2 Tbsp heavy cream (unsweetened)
1 tsp vanilla extract
¾ cup Swerve Confectioners (≈ 90 g)
1 cup grated zucchini, well-squeezed but still slightly damp
⅓ cup (82 g) full-fat cottage cheese, pureed & drained
Optional: ¼ cup chopped walnuts or pecans
🔪 Directions
Preheat oven to 325 °F (163 °C).
Line an 8×4-inch loaf pan with parchment, leaving wings to lift the loaf later. Lightly grease exposed sides.
Grate zucchini, salt lightly, rest 5 min, then squeeze firmly until only lightly damp.
Puree cottage cheese smooth, drain excess whey.
In a bowl, whisk almond flour, coconut flour, psyllium, baking powder, salt, and cinnamon.
In another bowl, whisk eggs and Swerve until combined. Add butter, cream, vanilla, and cottage cheese.
Fold dry ingredients into wet until nearly uniform. Add zucchini (and nuts if using).
Spread batter evenly into pan.
Bake uncovered for 35 min, check browning. If deep golden, tent with foil. Continue baking 55–60 min total, until toothpick comes out mostly clean.
Cool 15 min in pan, then lift out with parchment and rest another 15 min on rack before slicing warm.

MACROS (per serving, makes 4):
~520 calories | 51g protein | ~8g net carbs | ~29g fat
Classic marry me chicken: ~780 calories | ~26g protein
THE CHICKEN:
2 large chicken breasts (about 1.5 lbs), halved into 4 cutlets, pounded to 1/2 inch. Salt both sides and rest 15 minutes (this mini-brine is the juiciness insurance). Dredge in 1/4 cup almond flour + 1/4 cup grated parmesan mixed. Sear in 2 tbsp of the sun-dried tomato jar oil + 1 tbsp butter over medium-high, 3–4 minutes per side until golden and crusted. Set aside — slightly underdone is correct, they finish in the sauce.
THE PROTEIN SAUCE (the whole trick):
In the same pan on medium: 4 minced garlic cloves + 1/2 cup chopped oil-packed sun-dried tomatoes, 60 seconds. Add 3/4 cup chicken broth, scrape up every browned bit, simmer 2 minutes. Stir in 1/4 cup heavy cream, 1 tsp Italian seasoning, 1/2 tsp red pepper flakes, and 1/4 tsp xanthan gum (optional, keeps it silky).
THEN KILL THE HEAT. Wait for the bubbling to stop. Stir in 1 cup full-fat cottage cheese that youve blended completely smooth, then 1/2 cup fresh-grated parmesan in three additions. Off the heat is the whole trick — boiling splits cottage cheese into grainy curds, and dumped parmesan clumps. Off-heat and incremental = glossy restaurant sauce with ~15g of protein in the sauce alone.
FINISH: Chicken and its juices back in the pan on LOW, 3–4 minutes, spooning sauce over — steaming, never boiling. Torn basil on top. Serve over cauliflower mash, zucchini noodles, or my cabbage fettuccine.

Ingredients
For the Dough:
1 cup cottage cheese (blended until smooth)
1 ½ cups almond flour
2 tbsp coconut flour
1 tbsp baking powder
1 tsp xanthan gum (for elasticity)

1 ½ cups shredded mozzarella cheese
2 tbsp cream cheese
For the Maple Pecan Filling:
⅓ cup butter, melted
⅓ cup chopped pecans
¼ cup sugar-free maple syrup
2 tbsp allulose or keto sweetener
1 tsp cinnamon
½ tsp vanilla extract
Pinch of salt
For the Maple Glaze:
3 tbsp butter
3 tbsp sugar-free maple syrup
2 tbsp allulose (for gooeyness)
¼ cup chopped pecans
👨🍳 Instructions:
1️⃣ Preheat the Oven: Set to 350°F (175°C). Grease a round baking pan or cast iron skillet.
2️⃣ Make the Dough:
