1 egg for Egg wash (beaten)
Filling:
½ cup Cottage cheese (blended smooth)
2 oz Cream cheese (softened)

Optional:
Sugar-free chocolate chips, berries, or cinnamon for topping

- ¾ cup allulose
- 1 tsp baking soda + 1 tsp baking powder
- ½ tsp fine salt
- 3½ tsp pumpkin pie spice (looks like too much — it isnt; timid spice is why homemade copycats taste flat)
- Optional: ⅛ tsp turmeric — zero flavor, pushes the crumb to that Starbucks orange
Steps
1. Oven to 350°F, rack in the middle, and set a shallow pan on the rack below — youll pour hot water into it at bake time (steam = moist, crack-free top). Butter a 9x5 loaf pan and line with a parchment sling.
2. Blend the cottage cheese completely smooth, 30 seconds, zero curds. In a large bowl whisk the pumpkin, blended cottage cheese, yogurt, eggs and whites, vanilla, molasses, brown sugar, and melted butter until uniform.
3. Whisk all the dry ingredients together in a second bowl.
4. Add the dry to the wet in two additions, folding JUST until no dry streaks remain. Every stroke past combined is gluten, and gluten is the dense-loaf tax.
5. Scrape into the pan and smooth the top. Pour ~2 cups of hot water into the lower pan, loaf onto the middle rack, bake 50–60 minutes. If the top browns hard before 40 minutes, tent loosely with foil.
6. Done when a toothpick from the center comes out with a couple of moist crumbs, the dome springs back, and the edges pull from the sling (200–205°F in the center if you use a thermometer).
7. Cool in the pan 15 minutes, lift out by the sling, then cool at least an hour before slicing — pumpkin loaf slices gummy warm and clean cool. Day two, wrapped tight, its even moister than day one.
Freezer note: slice, wrap, freeze — 30 seconds in the microwave from frozen. The fall breakfast system.
