Cottage cheese is nearly impossible to find right now — and my whole channel runs on it. So I took my most famous recipe, the pizza bowl, and tested the 3 best cottage cheese substitutes head-to-head against the real thing: ricotta, Greek yogurt, and farmer's cheese. One of them shocked me.

MACROS (per bowl):
Original cottage cheese: ~410 cal | 33g protein | ~6g net carbs
Ricotta: ~530 cal | 29g protein | ~8g net carbs
Greek yogurt: ~390 cal | 29g protein | ~7g net carbs
Farmer's cheese: ~420 cal | 33g protein | ~6g net carbs
EVERY BOWL USES: 1 egg yolk, 2 tbsp grated parmesan, ½ tsp Italian seasoning, ⅛ tsp salt, ⅛ tsp pepper, optional pinch MSG — blended with the base until smooth. Then ¼ cup pizza sauce mixed with ¼–½ tsp minced garlic, ⅓ cup shredded mozzarella, 10 pepperoni slices, 2 tbsp diced green pepper, 2 tbsp diced onion.
METHOD (same for all): Blend the base completely smooth, pour into a greased ramekin (or muffin cups) ¾ full, bake at 400°F for 8–12 minutes until mostly set — it should jiggle like Jell-O, not slosh. Spread on the garlic sauce, add toppings, bake 2–3 minutes until melted, broil 1–2 minutes until bubbling. Cool 3–5 minutes before eating — it sets as it rests.
THE 4 BASES:
ORIGINAL: ¾ cup full-fat cottage cheese
RICOTTA: ¾ cup whole-milk ricotta + 1 extra tbsp parmesan (ricotta runs sweet — this pulls it savory)
GREEK YOGURT: ¾ cup plain whole-milk Greek yogurt, pressed between paper towels for 2 minutes to drain (skip the strainer — thick yogurt just sits there) + 1 extra tbsp parmesan
FARMER'S CHEESE: ¾ cup farmer's cheese + 2 tbsp milk (it's literally cottage cheese with the whey pressed out — find it near the queso fresco)

The Starbucks pumpkin loaf is 410 calories and 39 grams of sugar a slice — a third of that slice is sugar. This copycat rebuild matches it slab for slab: same orange crumb, same heavy spice, ~240 calories, 9g of sugar, and more than double the protein. Real flour, real pumpkin, a little real brown sugar — because this loafs job was to beat theirs in a blind bite, not just undercut it on a label.

🎃 FULL RECIPE — WEIGHT LOSS STARBUCKS PUMPKIN LOAF (one 9x5 loaf, 8 thick slabs)
Wet
- 2 tbsp butter, melted and slightly cooled
- 1 cup canned pumpkin purée (NOT pumpkin pie filling — check the label)
- ½ cup plain nonfat Greek yogurt + ½ cup full-fat cottage cheese, blended completely smooth
- 2 large eggs + 2 egg whites, room temperature
- 2 tsp vanilla extract
- 2 tsp molasses
- 3 tbsp brown sugar (yes, real — its one-fifth of their sugar)
Dry
- 1 cup all-purpose flour
- ½ cup oat flour (blitz oats in a dry blender)
- 1½ scoops vanilla whey protein (about ½ cup)
- ¾ cup allulose
- 1 tsp baking soda + 1 tsp baking powder
- ½ tsp fine salt
- 3½ tsp pumpkin pie spice (looks like too much — it isnt; timid spice is why homemade copycats taste flat)
- Optional: ⅛ tsp turmeric — zero flavor, pushes the crumb to that Starbucks orange
Steps
1. Oven to 350°F, rack in the middle, and set a shallow pan on the rack below — youll pour hot water into it at bake time (steam = moist, crack-free top). Butter a 9x5 loaf pan and line with a parchment sling.
2. Blend the cottage cheese completely smooth, 30 seconds, zero curds. In a large bowl whisk the pumpkin, blended cottage cheese, yogurt, eggs and whites, vanilla, molasses, brown sugar, and melted butter until uniform.
3. Whisk all the dry ingredients together in a second bowl.
4. Add the dry to the wet in two additions, folding JUST until no dry streaks remain. Every stroke past combined is gluten, and gluten is the dense-loaf tax.
5. Scrape into the pan and smooth the top. Pour ~2 cups of hot water into the lower pan, loaf onto the middle rack, bake 50–60 minutes. If the top browns hard before 40 minutes, tent loosely with foil.
6. Done when a toothpick from the center comes out with a couple of moist crumbs, the dome springs back, and the edges pull from the sling (200–205°F in the center if you use a thermometer).
7. Cool in the pan 15 minutes, lift out by the sling, then cool at least an hour before slicing — pumpkin loaf slices gummy warm and clean cool. Day two, wrapped tight, its even moister than day one.
Freezer note: slice, wrap, freeze — 30 seconds in the microwave from frozen. The fall breakfast system.
