KETO GARLIC BUTTER CLOUD BREAD ROLL-UPS (w/ Pepperoni & Cheese!) | Easy Low Carb Snack or Dinner!
These insanely delicious keto cloud bread roll-ups are soft, cheesy, garlicky, and packed with pepperoni goodness — without a single gram of flour. Perfect for lunch, dinner, or meal prep, and ready in under 30 minutes! Low carb, high protein, and totally satisfying.

🧀 Ingredients (makes 8 roll-ups)
Cloud Bread Base:
2 large eggs
½ cup full-fat cottage cheese
¼ tsp baking powder
¼ tsp garlic powder
Pinch of salt
(Optional: 1 Tbsp grated Parmesan to thicken)
Garlic Butter Topping:
2 Tbsp butter, melted
1 clove garlic, finely minced
2 Tbsp grated Parmesan cheese
Optional: ¼ tsp Italian seasoning
Filling:
½ cup shredded mozzarella cheese
16 slices pepperoni (2 per roll)
🔥 Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Make the batter:
In a blender, combine eggs, cottage cheese, baking powder, garlic powder, and salt. Blend for 20–30 seconds until smooth but not watery. Optional: Stir in 1 Tbsp Parmesan if the batter feels too thin.
Form the rounds:
Spoon about 2 tablespoons of batter per round onto parchment, spacing them apart. Use the back of a spoon to gently spread each into a 4-inch circle. You should get 8.
First bake:
Bake for 9–11 minutes until the tops look set and dry (they will still be pale). Let cool for 3–5 minutes.
Make garlic butter:
Mix melted butter, garlic, Parmesan, and seasoning (if using).
Assemble roll-ups:
Flip each cloud bread round over. Brush the inside lightly with garlic butter. Add a small strip of mozzarella and 2 slices pepperoni across the lower third. Roll up gently like a taquito.
Final bake:
Place roll-ups seam-side down on parchment. Brush tops with more garlic butter. Bake for 5–6 more minutes, or until warm and slightly golden. Optional: broil 1–2 minutes for a golden top.
Serve warm with your favorite keto marinara or garlic dip!

I rebuilt Lunchables for adults — two versions. Board One is the nostalgia upgrade: carved turkey, aged cheddar, and pepperoni chips instead of crackers. Board Two is a buffalo chicken salad lunchbox I packed at 8am, sealed, and ate cold at 4pm to see if it actually survives a workday. A real Lunchables has 11g of protein and a cookie. These have up to 96g. Were adults now.

BOARD ONE — THE CARVING BOARD (~510 cal | 49g protein | ~12g net carbs)
4.5 oz carved oven-roasted turkey breast (Costcos whole Kirkland breast — carve it thick), 1 oz aged clothbound cheddar broken into rough chunks, 10 pepperoni slices air-fried at 350°F for 5–7 min into crispy chips (these are the crackers), spicy pickle spears, ⅛ cup salt & vinegar pistachios, a mini cup of spicy mustard, and the dessert cup: ¼ cup cottage cheese + ¼ cup blueberries. Stack rule: pepperoni chip, fold of turkey, chunk of cheddar. One bite. You know why.
BOARD TWO — THE COLD LUNCH BOARD (full board: ~720 cal | 96g protein · half-salad version: ~465 cal | 55g)
BUFFALO CHICKEN SALAD: Blend ⅓ cup full-fat cottage cheese completely smooth, then blend in 1 tbsp real mayo (one spoon makes the whole dressing taste like mayo — dont skip it), 1 tsp Dijon, 1 tsp pickle brine, ½ tsp garlic powder, ¼ tsp onion powder, ½ tsp smoked paprika, ¼ tsp cayenne, salt and pepper. Add 3 tbsp dill pickles + 2–3 baby carrots and PULSE 2–3 times only (pulse, dont blend — you want confetti, not relish juice). Fold into 1 can (12.5 oz) drained, patted-dry, fork-flaked chicken breast with 1 tbsp Franks RedHot and a squeeze of lemon. Season it 20% bolder than tastes right — cold food eaten hours later loses volume. That rule alone will fix your meal prep.
On the board: the salad, half a beef stick sliced into coins, baby carrots for scooping, and a Babybel.
Smaller appetite? Split the salad across two days — thats ~465 cal / 55g protein per box and one build makes two lunches.
The internet is calling this whole anti-dessert snack plate thing savory-maxxing. Im calling it lunch.
