World’s Best Traditional Corned Beef & Cabbage
(American Wagyu Corned Beef Round – Keto Friendly)
Ingredients
1 (3–4 lb) American Wagyu Corned Beef Round, with spice packet
8–14 cups liquid as needed to fully submerge
(Use 4 cups beef broth + remainder water; keep total liquid enough to cover meat by ~1 inch)
1 medium yellow onion, quartered
4 cloves garlic, smashed
2 bay leaves
8–10 whole black peppercorns
1–2 whole cloves
½ teaspoon mustard powder
½ teaspoon ground coriander
½ teaspoon dried thyme
1 large green cabbage, cut into 8 wedges (core intact)
1 lb radishes, halved
2–3 tablespoons butter
1–2 teaspoons apple cider vinegar
Fresh cracked black pepper
Instructions
1. Cook the Corned Beef
Place the corned beef round in a large heavy pot.
Add enough liquid (broth + water) to fully submerge the meat by about 1 inch.
Add spice packet, onion, garlic, bay leaves, peppercorns, cloves, mustard powder, coriander, and thyme.
Bring to a boil.
Immediately reduce heat to maintain a gentle simmer (liquid around 180–185°F — small lazy bubbles only).
Cover and cook for 2½ to 3 hours.
Start checking internal temperature at 2½ hours.
The meat is done when:
Internal temperature reaches 190–195°F
A probe slides in easily but the meat still feels structured
Remove from liquid.
Rest 20 minutes, loosely covered.
2. Cook the Vegetables
Bring the broth back to a gentle simmer.
Add radishes and cabbage together.
Fully submerge.
Cover and simmer 25–30 minutes until cabbage is soft and silky.
3. Finish the Vegetables
Remove cabbage and radishes to a serving bowl.
Add:
Butter
1 teaspoon apple cider vinegar (taste before adding more)
Fresh cracked black pepper
A few spoonfuls of hot broth
Toss gently.
4. Slice and Serve
Slice the corned beef thin (¼ inch or slightly thinner) against the grain.
