Despite the relatively weak connection between nitrite consumption and cancer risk, this is yet another way where vegetables can come to the rescue! Vitamin C and many phenolic compounds inhibits the chemical reactions that produce nitrosamines, explaining why any link between cured meat and cancer disappears in people who consume even a modest amount of fresh vegetables and fruit.
