Meal timing is an important regulator of our circadian clocks. And circadian rhythms in glucose and lipid homeostasis, insulin responsiveness and sensitivity, energy expenditure, and postprandial metabolism, mean that our bodies respond to meals differently at different times of the day, overall favoring eating patterns with earlier temporal distribution of energy.

That being said, there are certainly situations that indicate a midnight snack like hypoglycemia, which is obviously a different situation.
