It's the end of my first year as a mom. I feel like I didn't fully comprehend that as I made this video. I just had such a long list of things to get done and get though over the busy last few weeks. I don't think I was able to enjoy this time very much unfortunately. Though out the next year, I'm gonna try to be more present and not always thinking about what's ahead and enjoy the moments with my family.
Realized I used more than I said in the video for the cake but what I was thinking of was that there was less than 1/4 Cup of erythritol in his cake.
Keto Black Chocolate Smash Cake and Cupcakes-

12 oz./1 1/2 Cup Avocado oil or butter
96 g/1/2 Cup 1:1 Granular Alternative Sweetener
1 Tbs. Pure Stevia Powder
4 Eggs (room temp)
2 tsp. Vanilla Extract (for black forest 1 tsp. cherry, 1 tsp. vanilla)
10 oz./1 1/4 Cup Homemade Buttermilk (Alternative milk + 2 tsp. Vinegar)
120 g/1 1/4 Cup Chocolate Whey Protein Isolate
75 g/1/2 Cup+2 Tbs. Coconut Flour
68 g/1/2 Cup + 3 Tbs. Black Cocoa Powder
1 tsp. Xanthan Gum
1 tsp. Baking Powder
1/2 tsp. Salt (omit if using salted butter)
1 1/2 tsp. Liquid Stevia
1 1/2 tsp. Baking soda
2 tsp. Vinegar
I poured 500 g into a greased and bottom parchment lined 6 inch cake pan and made 18 cupcakes
Cream Cheese Frosting with no erythritol-
8 oz. Cream Cheese
8 oz. Unsalted Butter
Pure Stevia and flavoring to taste
