I finally own a *real* Chef's knife. I'm calling it an early birthday prezzie. It's made by Thiers-Issard, in France, and it's a Sabatier "4 Star Elephant". It's a work of art, and I absolutely love it already.

To pressure test it, I did a veggie stir fry with samples of just about every veggie in the fridge. I did skip over some asparagus and an artichoke... LOL

For the protein, I flash fried some sea scallops with a handful of shrimp. Drizzled them with butter steeped with garlic, dill, and thyme. It was yummy.

The knife did pass the test. I haven't tried shaving with it yet...
