A very fast, very simple dish, not even vaguely Cajun (that's just the name of the cafe he stole it from), with a really rich flavor. It's another great variation for chicken, and I won't hesitate to try it with chicken breasts, too.
Ingredients:
3 lb Boneless skinless chicken thighs
1/4 cup oil for frying (I used peanut oil)
1 TBS Sesame oil
1/4 cup Bourbon
1/2 cup Soy sauce
1/2 cup Teryaki sauce
1/2 cup Brown sugar
Brown chicken in oil in wok on high heat. Lower heat, add remaining ingredients, mix together thoroughly and let simmer for 15 minutes, stirring occasionally.
That's all there is to it. Serve with rice and veggies. I spooned a little extra sauce over it after I plated it.
It's wide open for variations. You could add veggies to it, you could tighten it up with some sliced chilies to give it a bite on top of the sweet, you could bolster it with Oyster sauce... Just invent.
