Boneless New York Strips were on sale. What could I do? I stocked up.
This is the brute force method, searing it quickly at a high temperature for a good crust, while keeping it exactly medium rare inside. For a little more on the rare side, just drop back to about 3½ minutes.
Served it with a modified crispy Panzanella salad that I stole from Chef John over at FoodWishes.com. It's a great variation from the regular everyday salad.
