This has become a favorite "go to" recipe with me. It's a hearty, richly flavored, and even sorta healthy soup, easy to make, and wide open to variations according to your mood and what happens to be in the fridge.
I stole it from my sister, who stole it from someone else, and it's now yours to steal. Have at it. Here's the basic recipe:
Ingredients:
1 can Beef broth (I used 2 cups)
1 can Chicken broth (I used 2 cups of my own turkey stock)
1 - 2 "bunches" of Kale, cut bite-size (I used 1 pound)
2 - 3 - 4 Potatoes, cut in 1" cubes
3 - 4 Carrots,cut in bite size pieces
1 can Diced tomatoes, with juice
1/2 to 1 pound Smoked sausage, Kielbasa, Andouie, Ham, Bacon - mix-n-match,
bite size pieces
Salt & pepper to taste
(This also does well as a purely vegetarian soup, without the meat, for those so inclined.)
Heat broth, add carrots and potatoes, cover, simmer until potatoes are soft, about 20 minutes. Mash veggies lightly to help thicken broth.
Add kale. If you don't have a huge pot, add it in batches and let each cook down a few minutes. Cover and simmer until it's your desired tenderness, 1/2 hour to an hour or so.
Brown the meat and add somewhere around the halfway point.
When done, add the tomatoes and season to taste.
