Meatloaf stuffed with, yes, mashed potatoes and gravy!

I skipped over the details of making the gravy. The only real difference between mine and hers is that I used homemade beef stock.
The meatloaf is GREAT!! Moist, loaded with flavor, and the gravy didn't even leak out. It would've even come out in one piece if I hadn't turned it upside down getting it out of the pan. My ultimate solution, which came to me while watching it during edit, is to lay a foil liner in the pan, the full length of it, and bring it up over the sides. Then, you just grab the foil "handles" on both sides, and LIFT it straight up and out.
I WILL be making this one again. It's a keeper.
