No part of the turkey is sacred. After you've eaten all you can stand, stripped off and packaged every leftover you can get from it, the final touch is making stock from the carcass. It's the best you'll ever have, and more than worth the effort, and when you finally throw out the remains, it's with the confidence that you've taken that turkey for everything it's worth.

Ingredients:
1 dead used turkey
Assorted herbs
Water
A few hours of time, most of which is spent ignoring it while it boils.
