For the celebration of Independence Day, I smoked a bacon wrapped pork tenderloin, made BBQ sammiches with it, and served it with a spicy potato salad I stole from Hilah Johnson.

The pork was smoked over apple wood for 1 hour at 300°F, and was tender and juicy with just the right touch of smoke. Hilah's potato salad was the perfect complement, light and spicy.

Music: Stars and Stripes Forever
Composed by John Philip Sousa. Composition is in Public Domain
Performed by U.S. Marine Band. Performance is in Public Domain

In honor of my Dad, who loved everything Sousa ever wrote, and who played first trumpet in the Navy Band during WW2.
