For the celebration of Independence Day, I smoked a bacon wrapped pork tenderloin, made BBQ sammiches with it, and served it with a spicy potato salad I stole from Hilah Johnson.

The pork was smoked over apple wood for 1 hour at 300°F, and was tender and juicy with just the right touch of smoke. Hilah's potato salad was the perfect complement, light and spicy.
