Continuing the exploration of using the gas grill as a smoker, I did a rack of baby back ribs, hickory smoked, and holding the grill temp at 250°F.
Total cook time was just over 4 hours, the grill needed no babysitting, just a check every half hour or so, and they were among the best ribs I've ever sunk my teeth into.
Served with deviled eggs, a cucumber / zucchini salad (video to come), and French bread. YUM!
