I use Jiffy Cornbread Mix to make a simple Cornbread Casserole. It comes out of your oven moist and is delicious and sweet. It's easy to change up and make your own.
Ingredients:
1 (8.5 oz package Jiffy Cornbread Mix)
1 stick butter melted (4 oz)
1 can whole kernel corn, drained
1 can cream style corn
1/4 cup sugar
1 Tablespoon vanilla extract
1 cup sour cream
Black pepper to taste
Mix all ingredients, pour into a greased baking dish and bake for 30 minutes at 350F
I used an 8 X 11 baking dish.
You could add other ingredients like shredded cheddar cheese, jalapeos, crispy bacon or sautd onion.
