What a great Chicken and Rice Casserole. I saw this on the internet and changed it with additional spices and aromatics. See description below for full recipe and a link to the original recipe to check out if you like.
Ingredients:
1 can cream of chicken soup
1 can cream of broccoli soup
1 can cream of celery soup
1 Soup Can of Water
1 cup uncooked long grain rice
2 ribs of chopped celery
2 medium chopped carrots
1 large chopped onion
1 Tablespoon dried parsley
1 Tablespoon dried Italian Seasoning
large chicken breasts, up to 4
dots of butter

Saute your carrots, celery and onion till soft.
Basically just mix everything up.
Add your chicken and butter.

Bake @300F for 2 hours. Do not cover, bake this uncovered.

Now this was good, very good and the first time I have made this.
Next time I would not put the chicken in, and bake @ 300 for 45 minutes. Then take out of the oven and add the chicken and butter. Then bake @ 300F for n additional 1 hour and 15 minutes. The chicken was on the cusp of being dry. Any "leftover" chicken will be dry using the original method.

I will make this again, very good!
