I make Sausage and Peppers into a casserole and top it with cheese. Simple ingredients yet so good. See complete recipe in description. Makes 4 to 5 servings.
Ingredients:
1 pound fresh sausage
3 bell peppers
1 onion
15 ounce can of tomato pure
1 teaspoon garlic powder
1 teaspoon Italian Seasoning or Oregano
1 and 1/2 cups mozzarella shredded
Optional - a large jalapeo or two
Optional - some cloves of garlic
Optional - 1/2 cup parmesan cheese
salt/pepper

Cut everything into 1 inch squares the best you can.
Cut the peppers first then salt to taste.
Cut everything else and cut your sausage into 1 inch size pieces.
Put everything into a bowl and add your tomato puree and seasonings.
If you use parmesan, add this as well to your bowl and mix.

Put into a greased pan and cover tightly and bake for one hour at 350F
Pull from oven and top with mozzarella and broil to melt and brown the cheese.
