Best of both worlds to get a nice filet and a NY strip at the same time! Cooked 2 amazing Wagyu Porterhouse Steaks on the Slow ’N Sear MasterKettle! WOW!
• Started with two beautiful Wagyu Porterhouse Steaks.
• Salt brined the steaks and put in refrigerator for 24 hours.
• Set up the SNS MasterKettle Grill direct and indirect cooking.
• Lit the charcoal in the Slow ‘N Sear to hold around 250F degrees, it ran about 280F.
• Placed the porterhouse steaks on the indirect side and once we got to 80F Degrees and turned them. Once we hit 115F we pulled them to get ready for the sear.
• Let the grill get super-hot.
• Seared for 1 minute each side 2 times and removed them. Seared them one at a time because of the size of them.
• I overdid these a little, but they were still fantastic!
• Total time for the indirect side was about 30 minutes to get to 110F.
Summary: The Porterhouse steaks we huge! The Slow and Sear MasterKettle Grill worked great, but I would only let them rise to about 90F before I started searing because although they were huge, they were not real thick to take the searing. Having the MeatStick V and being able to monitor the temperature while searing is a game changer!
