I'm now a convert to Macadamia Nut Liqueur. Warm and nutty, refreshing and creamy with that pineapple finish. I believe through Beach Bum Berry's research he revived this cocktail but, the "Chi Chi" was a Don the Beachcomber cocktail, and originally contained Macadamia Liqueur. Macadamia nuts are and were expensive so the macadamia component was abandoned and therefore just called a Chi Chi. The Chi Chi cocktail is the height of what a Foo Foo, poolside, tropical cocktail should be. Join me in making the "Macadamia Nut Chi Chi."
Macadamia Nut Chi Chi | Cocktail Ingredients
2 oz. (60ml) Vodka
1 1/4 oz. (60ml) Macadamia Nut Liqueur
4 oz. (60 ml) Pineapple Juice
1 oz. (30 ml) Creme of Coconut Syrup
1 c. Crushed Ice
Flash blend between 5 - 8 seconds, pour into a hurricane glass,
garnish with pineapple fronds a Surfsidesips.com straw and an umbrella.
