This is a great really easy way to pickle vegetables, you can eat them in days, not months or weeks. Give it a try, this is my last of summer harvest with cucumbers, radishes, hot peppers, bell peppers and more.
Make it your own! If you have green beans, cucumbers, okra, anything else then go do it, use this brine for all sorts of veggies and turn them into pickled great!
Recipe:
1 T crushed red peppers
1 T whole black peppercorns
6 T mustard seeds
2 C water
2 C Vinegar (i used white)
1/3 C kosher salt
1/4 C sugar
(Modify the ingredients at will and make it your own)
The Brine:
Add the water and vinegar into a pot, add the salt and sugar and all the spices.
Bring to a boil then reduce to a simmer until the salt and sugar are well mixed in.
Let the brine cool to room temp, otherwise the veggies will tend to get boiled.
Cut whatever vegetables you want pickled. Green beans, cucumber, garlic, onion, hot and mild peppers, your imagination is the limit.
Put the vegetables in mason jars, pack them in and top with the brining liquid.
Seal them up and store in the fridge for 3 days, they will last several weeks in the fridge if you're lucky enough to save them that long.
