Hey all, it's Charley from Pickles BBQ. I'm doing some of the best tacos you will ever have with beef cheeks, underrated but so very good. Join me and my friend Ryan who makes amazing food and he's going to tell you a brilliant pickled onion recipe that goes fantastically well with tacos.

6 lbs of beef cheeks
Trim them up there's a lot of fat and silverskin. For this one I honestly ended up with about 2.5 ish pounds of cheeks. It depends on where you get them and how good they did on trimming them.
Season with salt and pepper, cumin and if you like hot spice add that or your own favorite rub.
Run the grill at about 275 with whatever kind of wood you like. I used pecan and hickory, mesquite works great too for this.
2-3 stalks celery rough chopped
1 whole onion sliced
1 large jalapeño sliced
Lay those in an aluminum pan on the indirect side, put the cheek on the grill grate, the remaining fat will fall into it.
Check in two hours and it should be close to the perfect color if not spot on. and
Pull the cheeks and the pan out of the grill. Add enough broth, I use beef, to about 1 inch in the pan. Add the cheeks and season at will, I used crushed red pepper and avocado leaves, bay leaves are fine too.
Cover with foil and continue to cook for around 4 hours or until it probes like jello.
Take it off, let it cool down and rest for 30 mins or so and then shred it up, it should be pull apart tender.
Top with your favorite toppings on a tortilla and BAM! Barbacoa as it’s colloquially known!
