It wouldn’t be a Milk Street Pie Week without Chris Kimball’s deeply-held pie convictions, so we’re re-running one of our favorite mini-lectures. Below, find Chris’s eight tenets of apple pie:
1) Use a mix of apples. Older varieties are best; avoid Fuji, Pink Lady, and Gala. In a pinch, turn to half-Grannies and half-Macs.
2) Use just a half cup sugar or a tad more for a deep dish pie (roughly 8 cups of apples).
3) NEVER add cinnamon—it’s overpowering. In fact, you need no spices at all, with the exception of chopped crystallized ginger (optional).
4) Use three or four tablespoons of lemon juice and two tablespoons of flour as a thickener.
5) Bake at 425 degrees for 20 minutes and reduce to 375 until done, about an hour total. Use a glass pie plate on lower rack.
6) Bake until crust is well browned, not light, to make sure the outer edge is cooked through.
7) Let the pie cool four hours. It makes an excellent breakfast the next morning.
