Negresco is a Chicken Casserole in Bchamel Sauce with cheese. I would think there is a thousand different recipes for this, here is what I came up with. It's good!
Ingredients:
2 chicken breasts (600 grams)
1 cup white wine (optional)
8 ounces egg noodles (227 grams)
4 Tablespoons butter (114 grams)
4 Tablespoons all purpose flour (30 grams)
salt
4 cups milk (945 Milliliters)
6 ounces Gruyre Cheese (170 grams)
1/2 cup bread crumbs
2 Tablespoons butter for top
3/4 cup parmesan cheese
Salt your chicken.
Gently poach chicken, then cool in poaching liquid.
Boil your noodles, drain and toss with butter or oil so they do not stick to each other.
Make your bchamel sauce by cooking the butter and flour together, then add your warm milk and cook over low heat until the sauce thickens.
Assemble your casserole:
noodles
chopped chicken
cheese
bchamel sauce
then the other half of noodles, chicken, cheese and sauce.
top with bread crumbs (I used Panko)
Dot with 2 Tablespoons butter pieces
Top off with your parmesan
Have your oven heated to 350F and bake for 35 minutes or so.
Allow to cool 10/15 minutes.
