I make a Herb Sauce that is like a pesto or chimichurri sauce. It is delicious with pork, fish, chicken, beef or anything that you can think of. The mint gives this a punch of wonderful flavor. I serve with some pork chops for an easy supper for two.
Ingredients:
Sauce:
1 Tablespoon drained capers
1 Tablespoon Dijon Mustard
1 Tablespoon white wine vinegar
1 cup of fresh parsley
1/2 cup fresh basil
1/2 cup fresh mint
2 to 3 Tablespoons Extra Virgin Olive Oil
salt/pepper to taste
Marinade:
1/4 cup olive oil
3 Tablespoons lemon juice
4 garlic cloves
1 Tablespoon chopped fresh rosemary
1 teaspoon black pepper
Marinade the chops at room temperature for an hour or so, turning in the marinade 3 or 4 times. You can marinate much longer, but do that in the refrigerator then bring to room temperature.
Grill or saute the 1 inch chops for 7 minutes each side till just done, or to your liking.
Serve with the sauce.
The three herbs really come together and the mint adds a great flavor as well. It is almost a fresh bite of spicy goodness with the mint.
