How to make a classic Gooseberry Pie, it's good!
Ingredients:
1 quart fresh gooseberries
1 and 3/4 cups sugar
1/4 cup tapioca (or flour)
1/2 teaspoon cinnamon
Egg wash and a bit of sugar for dusting the top crust

In medium saucepan combine the berries, sugar, cinnamon and tapioca.
Heat over medium to medium low heat until mixture bubbles.
Pour warm mixture into your pie pastry, cover with top pastry.
Wash with egg and sprinkle with sugar

Bake in preheated 375 oven for 45 minutes.
