A KitchenAid Mixer can make a batch of noodles in minutes. You can make them by hand as most people if you wish.
Ingredients:
2 eggs
1/4 cup half and half (light cream) or milk or water or broth (60 ml)
1 teaspoon table salt
2 cups plain flour (275 grams)
I use the light cream and eggs right out of the refrigerator. Using eggs at room temperature is fine as well.
When you roll out the dough it will snap back a little bit, so roll it out then allow to rest 10 minutes and roll out completely.
Cooking fresh noodles:
Be careful adding them to a rolling boil of broth by adding them one by one so they do not stick together.
If you dry the noodles overnight the noodles can be added all at once into your rolling boil of broth or water.
Fresh noodles take 15 or 20 minutes cook time to be tender.
I cook dried noodles about the same amount of time.
