My Grandmother's recipe for Buttermilk Cake. This recipe is older than I am and is the best white cake I have ever eaten. Also how to make the white frosting that she would make for this cake.
Ingredients:
2 and 1/4 cups Cake Flour
2 teaspoons baking powder
1/2 cup shortening
1 and 1/2 cups sugar
1 cup Buttermilk
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
3 eggs whites beaten to soft peaks

Method:
Grease and flour a 9 inch cake pan, then add wax paper to the bottom of the pan.
Sift your cake four and baking powder into a medium bowl.
Whip your three egg whites to a soft peak in a separate bowl.
Mix your shortening, sugar and salt until combined fairly well.
Mix your cup of buttermilk with the 1/2 teaspoon soda.
Add 1/2 of your buttermilk to the sugar/shortening and mix.
Add 1/2 of your flour to the sugar/shortening and mix.
Now add the rest of the buttermilk and mix.
Now add the rest of the flour and mix.

Take your cake batter and mix in the beaten egg whites.
Pour into your prepared cake pan.
Bake 350F for 45 minutes or so till done.

Remove from oven and allow to cool 15 minutes.
Turn cake out upside down, remove your wax paper and allow to cool to room temperature before frosting the cake.

You can bake in a 9 X13 pan and then it only takes 25 to 30 minutes to bake. Ovens vary in how hot they are so check at 25 minutes .

I have also baked this in two 9 inch round pans.
This is a smaller cake recipe and baking in two pans just made the cake look small. If using 2 cake pans, it bakes in 25 to 28 minutes.

Yes you can use regular flour.
Yes you can use regular milk.
Yes you can just put the egg whites in the cake without whipping them separately.
You would add the unbeaten egg whites just after you have mixed the sugar/shortening.
But if you want to make the best cake, please follow the recipe.

Frosting:
3/4 cup shortening
3/4 cup butter
dash of salt or large dash of salt, up to 1/2 teaspoon
1 teaspoon vanilla extract
2 and 1/2 cups confectioners sugar or more to your liking

This makes enough for a 13 X 9 cake or one layer cake.
You can use all shortening for the frosting if you wish, but i like some butter in the icing.

Years ago, my mother used this recipe for making my sister's wedding cake!
My mom took lessons on decorating cakes and she had the artistic personality to make lovely decorated cakes.
I have never had the will to bake wonderful creations like mom.
I somehow inherited the cooking gene, wanting to make meals.
