This Italian Fennel & Zucchini Casserole will warm your belly with it's cheesy goodness. I use a new seasoning from Tango Joe and the information on how to buy it is in the description. I bought this seasoning myself and Tango Joe has no idea that I like his product.
Ingredients:
2 large fennel bulbs
2 small/medium zucchini
olive oil
salt to taste
2 teaspoons Tango Joe's Rome Is Burning or 1 teaspoon Italian Seasoning and 1/2 teaspoon red pepper flakes.
32 ounces of crushed tomatoes
3 garlic cloves
1 pound mozzarella cheese
1/3 cup parmesan cheese
Fresh parsley for the top if desired
Boil your fennel bulbs for 25 minutes or so till soft but not falling apart.
Brown your sliced zucchini till soft but not falling apart.
Brown your garlic for 3 minutes in the cooling pan.
Mix up your sauce with some of the oil from the frying pan and the garlic
Layer your casserole as directed in the video
The Tango Joe Seasoning has the following ingredients:
Pecorino Romano
garlic
chipotle powder
onion
oregano
black pepper
fennel
rosemary
NO Salt, this has no salt, I apologize for saying that it had salt in the video . The cheese in this has some salt in the cheese though.
His spices are a large size bottles, this one weighs 2.75 oz
This blend costs $7 on his website
All of his spices come in the same size bottle and most of them weigh much more that this one. His spices are really a good value for your money and salt is never the first ingredient.
