Here is how to make the classic Green Goddess Dressing Recipe from the 1960's. It is like a ranch dressing filled with fresh green herbs that is quite good. You should give it a try!
Ingredients:
1 anchovy fillet
2 Tablespoons lemon juice
1 or 2 Tablespoons fresh tarragon (1 teaspoon dried)
1/4 cup fresh chopped parsley (2 Tablespoons dried)
1/4 cup fresh chopped chives or green onion tops
1/2 cup sour cream
1 cup mayonnaise
salt/pepper to taste if needed, I do not add any though
Since we are using an anchovy, we need to use the blender.
If you do not use the anchovy, you can just stir it together, but I highly recommend using either an anchovy or some anchovy paste.
Also if you do not want to use a blender, take the anchovy and mash it wish 1/2 teaspoon salt, then mix your ingredients. The salt will be fine in this but it really is not needed in general.
Chill for an hour and it is ready to use. I becomes quite thick after chilling. You could use some milk to thin if desired.
