A different Shrimp Recipe that I saw on TV and wanted to try. A nice Chardonnay Sauce completes a wonderful plate of the shrimp.
Ingredients:
Sauce:
2 Tablespoons butter
1/4 cup celery
1/4 cup carrots
1/4 cup onion
4 large garlic cloves
2 ounces pancetta
1/4 teaspoon red pepper flakes
1 bay leaf
2 cups chardonnay
2 cups chicken broth
1 Tablespoon soft butter mixed with 1 Tablespoon flour
Cook your celery, carrots, onion and butter till soft.
Add your pancetta, garlic, bay leaf and red pepper and cook for 6 minutes.
Add your wine and cook till reduced by half.
Add your chicken broth and cook till reduced by half.
Strain your sauce, then add your butter/flour to thicken sauce to your liking. If you are using salted chicken broth you will not need to salt your sauce.
Keep sauce warm.
For the shrimp:
12 ounces shrimp
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon paprika
2 ounces panchetta
1/4 cup finely chopped onion
1/2 cup garbanzo beans (drained and rinsed)
3 Tablespoons of chopped sun dried tomatoes packed in olive oil
1 cup spinach stuffed full in the cup
Season your shrimp with the spices.
Over low to medium low heat, brown your pancetta and onions.
Add your garbanzo beans, tomatoes and shrimp, cook till almost done.
Add your spinach and cook till everything is done.
Serve with sauce
