I make my own homemade enchilada sauce, the star of the dish. I also use ground beef for an easy weeknight meal that will take you around an hour to put together. See full recipe in description.
Sauce Ingredients:
7 guajillo chilies
6 ancho chilies
4 cloves garlic
3 roma tomatoes (2 would be fine as well)
1/2 of a medium onion
2 Tablespoons plain vinegar
2 teaspoons salt (I used a coarse salt)
2 teaspoons oregano

Warm your chilies in a medium hot pan.
Then remove all the seeds and any membranes from the chilies.
Put all your chilies into a pot of water with the garlic and two or three tomatoes.
Bring to a boil and boil/simmer for 8 minutes.
Turn off the heat and allow to cool at least 5 minutes before putting into your blender.
When you blend this up be careful because blending hot foods can be dangerous.
Add your warm tomatoes and chilies and garlic to your blender.
Add your vinegar, salt, oregano and 1/2 onion to your blender, and blend until smooth.
Your sauce is done, taste for salt!!

Hint.... When you are done heating your chilies, use that hot pan to fry up your ground beef right away. By the time you are done de-seeding your chilies, your ground beef will be cooked.

Filling Ingredients:
1 pound ground beef
salt/pepper for cooking your ground beef
2 cups sour cream (room temperature)
8 ounces shredded cheese like cheddar or Colby Jack
1 teaspoon cumin
1 teaspoon oregano
1/4 teaspoon cayenne pepper

Cook your ground beef, then cool to room temperature
Add it to a large bowl and the sour cream, cumin, oregano and cayenne and mix to combine.
You are done with your filling.
The cayenne will not make your filling spicy since it is not very much.
You can use regular pepper if you wish and as much as you like.

I like using corn tortillas, but you can use flour tortillas if you like.
I needed 20 corn tortillas.

Keep your sauce warm, dip each tortilla into sauce, then fill with 3 Tablespoons of filling and roll.
Put them into your greased baking dish.
Then put sauce and more cheese over the top.
I used 6 ounces of cheddar cheese.
Bake for 30 minutes @ 350
Top with cilantro if desired.
To serve, use shredded iceberg lettuce and queso fresco if desired.

queso fresco
