These are so good, Guajillo Chicken Tacos. The flavors here are balanced and just right. Simple to make, you have to try this one!
Ingredients:
5 Guajillo Chilies
1 Ancho Chili
2 Tablespoons vinegar
1/2 of medium sized onion
5 garlic cloves
1 teaspoon coarse ground salt (1/2 teaspoon table salt)
1 Tablespoon honey
1 and 1/2 cups orange juice
1 Tablespoon lard or other fat/oil
1 teaspoon cumin
1 teaspoon oregano
1 and 1/2 pound chicken thighs boneless skinless

Method:
Cut open your chilies and remove seeds.
Warm your chilies in medium hot pan until fragrant.
Soak your chilies in hot water for 20 minutes.

Put your drained chilies into a blender with the vinegar, salt, onion, garlic, honey and orange juice.
Blend until sauce is smooth.

Salt and pepper your chicken.

Heat pan back up and add your one Tablespoon Lard with the cumin and oregano.
Pour your blended sauce into your pan and cook for one minute.
Add 1/4 cup soaking liquid.
Add your seasoned chicken and cook 20 minutes, turning and stirring once or twice.

Remove your chicken to cool and reduce your sauce down to 1 and 1/2 cups.

Returned your shredded or chopped chicken back into the reduced sauce and warm back up.

Serve with some beans and rice on a plate.
Also great in tortillas with chopped onion/cilantro.
