Here is my Beet Salad that you can dress up for any special occasion. I forgot about the goat cheese. You take the goat cheese and put little dots of the cheese over the beets or you can give everyone a thick slice of the cheese to take little bites of it with the beets.
Ingredients:
6 beets with greens
1 Tablespoon oil (vegetable or olive)
Dressing:
3 Tablespoons minced shallots
1 garlic clove
3 Tablespoons Sweet Port Wine or Cabernet/Merlot
3 Tablespoons White Balsamic Vinegar
1/4 cup good Olive Oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Method:
Clean and scrub your beets. Save your beet greens if desired and wash them two times, save in a plastic bag wrapped in paper towel and put into refrigerator.
Bake your beets for 45 minutes @ 400F in a foil package. Then when the 45 minutes is up, I turn the oven off and leave them in there for 30 minutes with the door closed. Put into refrigerator and cool them until tomorrow.
You can use the beets the same day, just cool them enough to handle. Peel and cut them into slices and put into refrigerator to cool while you make the dressing.
Make your dressing at any time.
