This can be a keto meal. Quick to make these Zucchini Taco Boats can be changed to your liking and spiced up as much as you like.
Ingredients:
2 medium zucchini
olive oil
salt
pepper
1 pound ground beef
1 package Taco Seasoning Mix
1 cup water
Toppings:
cheese of your choice, a lot or a little
sour cream
radish
chopped onion
pickled jalapeos
Cut zucchini in half, then scoop out the seedy middle making them into a boat.
Sprinkle with olive oil, pepper and salt.
Bake in oven for 13 minutes @ 375F or longer if you like well done.
While the zucchini are in the oven, brown the ground beef and then add the taco seasoning and water.
Cook for 3 minutes longer.
Remove the zucchini from the oven, then fill with your ground beef.
Add cheese on top.
Bake @ 375 in the oven again until heated through and cheese is melted.
About 7 or 8 minutes.
Serve with desired toppings.
*NOTE*** I would prefer the zucchini a bit more done, so bake them longer if you prefer and be sure to salt them more than I did here.
