This is a medium spicy Chicken Tortilla Soup using common ingredients that makes it easy to make. Full recipe is in the description below.
Ingredients:
4 cups chicken broth
One pound chicken breast or more
salt for the chicken
Juice of one lime
1/2 teaspoon white pepper
1/2 teaspoon cumin
1/2 teaspoon turmeric
1 teaspoon garlic powder
1 teaspoon oregano
2 teaspoons chili powder
3 cans of the original Rotel Tomatoes
Green onion tops
6 to 10 small corn tortillas
oil for frying
extra lime slices for serving
cilantro for serving
sour cream for serving

I like to salt the chicken and all to rest in the refrigerator for an hour.
Simmer the chicken in the chicken broth until done.
Remove the chicken and set aside.

While the chicken is cooling add to the broth the next eight ingredients and simmer while the chicken is cooling.

Add your torn chicken pieces and your green onion tops to the broth.

Heat around one inch of vegetable oil and fry your cut up tortilla pieces.

Serve your soup with desired toppings and enjoy!

This is a medium spicy recipe.
If it is too spicy for you, add some sour cream to your bowl and that will reduce the spice.
You can also use only one can of rotel tomatoes if you like it mild.
