I turn ground beef into a Japanese Inspired Meatball. The meatballs alone are very nice. I think I would skip the sauce next time because it was too intense. I would have the meatballs anytime with rice or noodles or even mashed potatoes.
Ingredients:
Meatballs:
1 pound ground beef (very lean)
3/4 cup chopped scallions (about 5)
1 cups chopped cilantro (a nice bunch of them)
1 egg
2 Tablespoons soy sauce
2 Tablespoons bread crumbs (for moisture)
2 Tablespoons sesame oil
black pepper to taste
some vegetable oil for frying
Sauce:
1 cup brown sugar
1 cup water
ginger slices
8 peppercorns
1 cup soy sauce
1 cup Mirin (very sweet wine)
Sauce your meatballs till done, around 15 minutes if they are small like mine. You can make them larger if you like.
Then add your sauce that you reduced and cook for 3 minutes.
Add a mixture of 2 Tablespoons corn starch with 3 Tablespoons water to the boiling sauce. It will thicken somewhat in 3 minutes. You can skip that if you wish.
