Between her decent defenses and somewhat hard to exploit weaknesses, it can be a very uphill fight to just outdamage her regeneration, which can make the battle seem almost impossible at first glance. The key to making the fight easy is ailments; Mokou has low to middlish resists to every ailment except DTH, so Wriggle's PSN (pretty easy to inflict) and Cirno's SPD debuff (slightly harder to inflict but still very possible) makes her regeneration a lot less of an issue, and her HP isn't actually that high. All that's left is to make sure someone can survive the Resurrection + Fujiyama Volcano combo, then you can just switch in one final salvo (Marisa would be great here) to finish the battle with.
