Huckleberry Muffins
(For a 12” Camp Oven)
Ingredients:
1 cup fresh huckleberries (or blueberries)
3 tbsp. sugar
2 cup all-purpose flour, sifted
3 tsp. baking powder
½ tsp. salt
1 egg, well beaten
1 cup milk
2 tbsp. butter
¾ cup white chocolate baking chips (optional)
Directions:
1. Place 9 regular mouth canning jar bands in camp oven, to hold paper muffin cups. (The muffins will be large and mushroom over the top a bit when baked)
2. Place huckleberries in a small bowl and sprinkle with sugar. Set aside.
3. Stir flour, baking powder and salt together in a medium mixing bowl. Set aside.
4. Stir egg, milk and melted butter together in a separate small bowl. Quickly add wet ingredients to dry ingredients and stir together.
5. Fold in baking chips, if used. Gently fold in sugared huckleberries. Light 31 briquettes. Place paper baking cups into canning bands. Fill cups with batter, using a fork. Preheat oven lid using 21 briquettes. Adjust the cups to fit firmly inside the canning rings and top cups with additional batter.
6. Place remaining 10 briquettes under oven wall and place heated oven lid onto oven. Bake 25-30 minutes until golden brown and muffin tops are firm to touch.
7. Remove muffins from heat, using tongs, set aside to cool. Remove paper cups before serving. Enjoy!!!
