Holiday Sweet Potato Casserole
(For a 12" Camp Oven)
Ingredients:
6 medium size yams, peeled sliced & quartered
1 tbsp. pure vanilla extract
1/4 cup heavy whipping cream
1 1/4 cups dark brown sugar, packed (divided, reserve 1/4 cup for topping)
3/4 cup granulated sugar
1/2 tsp. ground ginger
1 tsp. cinnamon
1 tsp. nutmeg
1/2 stick of butter, sliced into 7 pats
4 oz. chopped pecans
small marshmellows (optional)
Directions:
1. Place sweet potato chunks into a 12" Camp Oven, add water to cover potatos, cover and bring to a boil. Remove lid, reduce heat to maintain a low boil for 15 minutes. Drain potatoes. Mash potatoes in the camp oven while they are still hot.
2. Add Vanilla, Whipping Cream, 1 cup of the Dark Brown Sugar, Granulated Sugar, Ginger, Cinnamon and Nutmeg. Fold to combine and stir to blend until mixture is smooth and even. Using a spatula, smooth out the top of the mixture. Place Butter Pats on top mixture. Combine Pecans and remaining Brown Sugar and sprinkle over mixture. Add Marshmellows, if used. Cover casserole with oven lid.
3. Place 10 briquettes under oven and place 18 briquettes in a tight outer ring on the lid and form a loose inner ring on the lid using 8 briquettes. Bake for 25 minutes. If using Marshmellows, bake until golden brown.
4. Enjoy!!!
