Fogcrawler's Pork & Beans

Ingredients:
4 cups dry navy beans (soaked overnight)
1 large sweet yellow onion, chopped
2 cups ketchup
1/2 cup brown sugar
2 tbsp. molasses
1 tbsp. cider vinegar
3 tsp. ground mustard
12 cloves
1 lb. smoked pork belly trimmings, chopped (Or substitute smoked bacon)
1 lb. pork belly trimmings, chopped (Or substitute salt pork)
salt &pepper to taste. (if needed)
water

Directions:
Place dry beans into large bowl. Add enough water to bring water level 1” above beans. Cover and soak overnight.
Place bean mixture into a 12” deep camp oven. Add remaining ingredients, giving a quick stir to level mixture. Add enough water to equal mixture height.
Cover and simmer low and slow for 4 hours. (12 briquettes on lid, 7 briquettes under oven – Changing coals every hour)
Skim off excess fat, increasing under oven briquette count to 15, cook for 1 hour.
Remove cloves. Check beans for doneness and runniness of liquid. If beans need additional cooking time, or liquid needs to thicken up, change coals and cook for 1 additional hour. (Remove lid and stir frequently to thicken, if need be)
