Low & Slow Cross Rib Roast
(For a 12" Camp Oven)
Ingredients:
2 - 6 lb. cross rib roast
3 tbsp. olive oil, divided ( reserve 2 tbsp. for searing roast)
2 tbsp. worcestershire sauce
2 tbsp. minced garlic
2 tsp. dried thyme
1 tsp. dried rosemary
1 tsp. salt
1 tsp. coarse black pepper
Directions:
1. Brush or rub roast with worecestershire sauce and reserve olive oil for searing meat.
2. Make a paste with all other remaining ingredients and apply to meat.
3. Place a single layer of briquettes under oven to preheat. Add reserve oil.
4. Place meat into hot oil and sear all sides, 10-15 minutes.
5. Lift roast from oven, insert trivet and place roast onto trivet.
6. Discard coals for searing meat. Place 4 briquettes under oven and 9 briquettes on oven lid.
7. Use a meat thermometer to monitor center of roast temperature.
8. Change coals every hour & cook roast until roast center reaches 135F.
9. Remove meat from oven and tent for 20 minutes.
10. Slice & ENJOY!!!
