Sloppy-Joe Cups
(For a 12” Camp Oven & #7 Skillet)
Ingredients:
1 lb. lean ground beef
1 red bell pepper, chopped
1 bunch green onions, sliced, divided
2 tbsp. yellow mustard
¾ cup barbecue sauce
1 ½ cup shredded cheese, divided
1 can refrigerated big buttermilk biscuits (8 biscuits)
salt, pepper, garlic and/or other seasonings to your taste
Directions:
1. Brown ground beef, bell pepper and ½ cup onions in skillet, using 20 briquettes under oven. Drain grease from skillet and add, mustard, barbecue sauce and 1 cup of cheese. Stir mixture to blend evenly and cook for 2 minutes, until cheese is melted. Season to taste and remove skillet from heat.
2. Open and separate biscuits and place into a greased Camp Oven or use parchment paper if oven is not greased. Press a well into each biscuit using the bottom of a measuring cup to form the biscuit cups. Spoon meat mixture into the biscuit cups. Bake at 375°F using 27 briquettes 15-20 minutes, (18 on lid, 9 under oven) until biscuits are lightly browned. Sprinkle remaining cheese over the filling of each biscuit cup and bake an additional 5 minutes, or until cheese is melted. (The cheese takes the “Sloppy”, out of “Sloppy-Joe”) Sprinkle remaining onions on top before serving.
3. Enjoy this tasty dish!!! (Serves 8)
