Camper Cookie Cups
(For a 12” Camp Oven and a Mini Muffin Pan)
Ingredients:
1 pkg. refrigerated peanut butter cookie dough (16 oz.)
½ cup hazelnut spread (like nutella)
½ cup creamy peanut butter
1 – 1½ cups of your favorite trail mix
cooking oil spray
mini baking cups
Directions:
1. Preheat Camp Oven to 350°F using 9 briquettes under the oven wall, spaced evenly in a ring and 17 briquettes on top of the lid in a tight ring, up against the ash guard. (26 briquettes total)
2. In a small bowl mix the hazelnut spread and peanut butter together until smooth, set aside.
3. Spray the mini pan with cooking oil spray and place the dough into each cup of the pan. (Don’t use the paper baking cups just yet) Using a finger or thumb, make a slight depression into the dough to shape the dough into the cup. (More shaping to follow after the cookies are baked, but still warm)
4. Remove the lid from the heated oven, place the mini pan inside the oven and return the lid to the oven. Bake the cookies 12-14 minutes.
5. When cookies are baked, remove the mini pan from the oven to cool. While the cookies are still warm and soft, shape them to hold more filling. (A rounded wooden spoon handle works great) Allow the cookies to cool for about 10 minutes before lifting them out of the pan. Once cooled, remove them from the pan and place them on a wire rack to continue cooling for another 10 minutes.
6. Place the cookies into the baking cups. Fill the cookie cups with the creamy spread and trail mix… ENJOY!!! (Makes 2 dozen)
